Project Halcyon prides itself on being one of Manchester's best kept secret when it comes to cocktail spots.

Located in Bonded Warehouse in what was once the old Granada Studios, Project Halcyon takes the term speakeasy very seriously - the stunning interior sets a scene as though you're entering an illicit turn of the century warehouse bar.

Having been named 'One to Watch' at the Top 50 Cocktail Bar Awards and 'Manchester's Best New Bar' at the Manchester Bar Awards 2023, they've had an excellent year so far.

The bar features an in-house distillery and lab where the team create the bespoke spirits and ingredients that go into their incredible cocktails.

Their latest menu Expression explores a world of drinks inspired by idioms, featuring weird and wonderful ingredients like Guava Soda, Marmite Bitters, Fermented redcurrants and Mirin.

They also have a series of house classics that are their unique interpretation on some iconic cocktails. The house vodka martini is batched and served straight from the freezer; however instead of using water to dilute as you traditionally would, the team at Halcyon makes clarified banana juice and uses that to provide dilution, flavour and texture.

Halcyon is all about unique experiences and it doesn't just stop at the cocktail menu; the place even has its own dedicated absinthe parlour where the infamous spirit is served traditionally tableside.

Speaking of tableside, Halcyon boasts one of Manchester's only drinks trolley. Built in collaboration with Buffalo Trace, the Halcyon team believe they deliver the best Old Fashioned you can find crafted at your tableside.

In spite of having all these incredible offerings, the team at Halcyon make sure to keep good classic hospitality at the heart of everything they do.

The award-winning bartenders ensure that each guests experience is bespoke and unique to them. It's easy to see why it's one of the highest reviewed bars in the city.

Built by brothers Aaron and Callum who opened Manchester's first ever gin distillery, the bar is headed by Adam Taylor, an award-winning hospitality professional who has spent years honing his craft.

The rest of the team comes from a diverse background of bartending and make for a team that is clearly close-knit.

Halcyon is open Wednesday & Thursday 4pm-12am, Friday & Saturday 3pm-1am and Sunday 2pm-11pm. On Sunday they offer you 33 per cent off your bill if you've visited another independent restaraunt or bar that day.
